On Ōmisoka, Japan’s New Year's Eve, it’s tradition to savour toshikoshi soba, or "year-crossing noodles". The long buckwheat noodles symbolise longevity and resilience due to their shape and easy cutting. This custom dates back to the Edo period, adding a unique culinary twist to the year's end celebration.
